I have always preferred to make bread with tangzhong but yesterday I decided to try the straight dough method in bread making and try out Carol’s recipe. This recipe uses 3 eggs and thus the dough is rather wet and sticky. As the result, the bread is fluffy soft.
Ingredients:
Make 8 rolls.
Bread flour: 270g
Cake flour: 30g
Instant yeast: 3/4 tsp
Sugar: 30g
Eggs : 3 (150g)
Milk: 50cc
Salt: 1/4 tsp
Unsalted butter: 30g

I should have split the dough into smaller portion as my kids complained that they are too big for them.

Kit, Carol doesn’t write in English as she’s a Taiwanese. I have something similar here on this post. Even if the bread recipe is different, the steps of making bread is the almost the same.
